Chocolate-Covered Strawberry Pizza

There are two things that you’ll notice right off the bat about the picture above. 1) That it’s pizza and 2) there are strawberries on that pizza! But the one thing you won’t exactly pick up from that picture is that crust isn’t just any crust.

It’s COOKIE.

Yes, we’re talking a soft and sweet tasty cookie to make the base for this incredible dessert pizza. And who needs tomato sauce when you can have a vanilla cream cheese sauce on top of your cookie crust? And instead of anchovies or ridiculous pepperoni, let’s top it with strawberries and then drizzle those with creamy chocolate ganache shall we?

And the next step is to make sure to alert the others in your household that it’s there. Otherwise you might find yourself eating this entire pizza yourself.

It all starts with something extremely easy, (dare I say) store-bought sugar cookie dough. I got lazy and this whole idea came to me when I was staring at the cookie dough section at the store. So feel free to make yours from scratch if you wish. I’m sure it will make it all that much tastier.

Simply place it onto a pizza pan and flatten away. Bake it according to the directions on the package or your recipe, you overachiever. 😉 I left mine just a tad bit soft so that it would still have some give similar to breaded crust.

Then using a spoon that you’ve clearly been licking, spread the yummy vanilla cream cheese onto your crust.

After making up your strawberry sauce, spoon it onto your cream cheese and get ready for the chocolate baby.

This chocolate ganache is as simple as it gets. Cream and semi-sweet chocolate chips are a match made in heaven. Drizzled over strawberries on this pizza, they are heavenly for sure.

Do you see what I’m talking about? It just doesn’t get any better than this.

Chocolate-Covered Strawberry Pizza
Recipe Type: Dessert, Pizza

Pizza isn’t just dinner anymore, it’s dessert too!
Ingredients
  • 1 Package Sugar Cookie Dough
  • 2 Cups Capped, Hulled, and Chopped Stawberries
  • 1 8 oz Package Cream Cheese (I use 1/3 less fat kind)- Softened
  • 1/2 Cup Splenda + 1 and 1/2 Tbsp Splenda
  • 1/2 Cup Heavy Cream
  • 1/4 Semi-Sweet Chocolate Chips
  • 2 Tbsp Water
  • 1 Tsp Cornstarch
  • 1/2 Tsp Vanilla Extract
Instructions
  1. Prepare cookie dough according to directions, but place on pizza pan to cook. Let cool.
  2. Meanwhile, whip cream cheese, vanilla, and 1/2 c. Splenda together. Spread onto cooled cookie crust.
  3. In a small saucepan, combine 1 and 1/2 tbsp Splenda, strawberries, water, and cornstarch. Bring to boil, then simmer for 5-6 minutes. Let cool.
  4. Pour over cream cheese taking care to not cover the entire cream cheese area.
  5. In a microwave safe dish, heat cream for 1 minute or until boiling. Place chocolate chips in cream and let sit for 2 minutes. Begin to shake the bowl allowing the chips to begin to melt. Don’t stir just yet. Microwave another minute, then stir together. Allow to cool for a bit.
  6. Drizzle chocolate over pizza. Cut into slices and serve!
  7. Keep refrigerated.

Strawberry Salsa Chicken

Take me or leave me, but I like weird things to eat. Well, what some might call weird anyways. I was making a hot dog the other night and was so excited while I prepared my ingredients. My husband watched as I drug out the relish, mustard, and ketchup. Then I decided that it wasn’t complete without chopped onions. Almost in awe of my condiment concoction, he asked “Did you chop that entire onion just for a little for your hot dog?”. Why yes, I in fact had chopped a very small amount of onion just for my hot dog. That’s how me and my dogs roll you know. He thinks I’m a bit odd, but I know there are others out there like me.

Like someone else who might like strawberry salsa? That’s another weird thing that might be perplexing to some. We’re talking replacing your tomatoes with juicy and summery strawberries instead. It’s absolutely divine I tell you. I had no idea that it would be so incredible.

And then I ate it with chicken.

Just imagine me kissing my fingers like the Italians do. It’s that marvelous.

Complete with cool and crisp cucumbers, lime juice, brown sugar and even jalapeno, I can almost guarantee that you will like this. Oh and if you don’t like hot salsa, don’t worry. The one jalapeno that is in this will not be hot. It’s really the one thing that makes this a “salsa”.

I’ve also learned a fancy smancy teqnique for making oven baked chicken PERFECT. The key is to brown it in a skillet a few minutes on each side. Not enough to cook it through, but just enough to get it browned a bit. Then finish it off in the oven. Works everytime to get the most perfectly cooked chicken ever.

AND I also highly recommend pounding your meat first. Yes, it seems like a lot of work but trust me. You will not only enjoy the task, but you’ll also enjoy the chicken a lot more than going without. I told my mom about this recently and she always beats her chicken first now! Just do it next time and you’ll see.

Strawberry Salsa Chicken

Celebrate summer with this baked chicken with strawberry salsa!

Ingredients

  • Boneless, Skinless Chicken Breasts
  • 1 Tbsp Olive Oil
  • 1 and 1/2 c. Strawberries, Chopped
  • 1/2 c. Cucumber, Chopped
  • 2 Green Onions, Chopped
  • 1 Jalapeno, Chopped
  • 1 Tbsp Cilantro, Chopped
  • The Juice of 1 Lime
  • 2 Tbsp Brown Sugar

Method

  1. Preheat oven to 350 degrees. Season chicken with salt and pepper. Brown chicken over medium high heat in oil for a few moments on each side. Just until browned, no need to cook through. Bake 20 minutes.
  2. Meanwhile, mix all salsa ingredients and combine well. Place in refrigerator until chicken is done.
  3. Remove chicken from oven. Serve salsa over chicken!

Notes

There's no much to it! Simple as pie.

The salsa would be divine with tortilla chips too!

Strawberry Banana Smoothie Pops

Sometimes I wish that I had a dime for every time that my daughter came to me during the day saying “I’m huuuuuuuungry”. You don’t even have to have kids to know exactly what that statement sounds like. I can remember saying that to my mom when I was young. Even after my daughter has just eaten a complete meal, not 10 minutes later I hear those words come out of her mouth. So around here it’s imperative that we have healthy snacks available for these moments of huuuuuunger.

Some of the snacks of choice that I like to have on-hand are string cheese, peanut butter crackers, and fruit snacks. But we’re almost to summer and it’s time to cool off with some refreshing snacks on a hot day. My favorite store for produce, Aldi of course, had a great price on strawberries the other day and I stocked up! They also almost always have the best price on bananas in town. To me, nothing brings those two fruits together better than a smoothie! But if you don’t want to have to create a smoothie every time you would like one, the pops might just satisfy your strawberry banana smoothie craving!

I mixed a couple of bananas and several strawberries together with a little plain yogurt and a pinch of splenda and threw it all in several dixie cups. I popped popsicle sticks into each one and froze them to create these yummy smoothie pops.

It’s a snack that’s not only healthy but really satisfying and refreshing at the same time. And I love that making them in these cups make them fairly big. Maybe more than you would get from a store bought pop and way cheaper for sure!

Strawberry Banana Smoothie Pops

Strawberry Banana Smoothie Pops

A natural and refreshing popsicle made from fresh strawberries and bananas.

Ingredients

  • 2 Large Bananas
  • 10 Medium-Large Strawberries, Cored
  • 1/4 Cup Plain Nonfat Yogurt
  • 1 Tsp Sugar Substitute (optional)
  • 8 Small Dixie Cups

Method

  1. Place all ingredients in a food processor or blender and mix until smooth.
  2. Pour into cups and freeze until solid (around 2-3 hours).

Notes

You don't have to use "Dixie" cups. Use whatever cups you might have. We used plastic bathroom cups. Depending on the size, you may have more or less popsicles.

The sugar substitute addition is not completely necessary. The strawberries and bananas give it plenty of natural sweetness, I just like mine extra sweet!
